Hop-a-Billy is a dry, hoppy saison. The dry hopping with citra and/or Simcoe (depending on the brewer's mood) gives a pronounced citra aroma. Nicely balanced between bitter and tart.

Brewer jef Goetelen, also called Jef the Brewer, started brewing beer a few decades ago. Tasting then worked better than brewing, so he left everything for what it was. After a silence of 15 years, he decided in 2001 to take another chance, this time well. After a few years of experimenting, he started his own brewery in his own garden (hof) hence the name Hofbrouwerijke.
